If you're new, I'd suggest Inarizushi or Makizushi.
Inarizushi is basically sweet deep fried tofu with vinegared rice.
Makizushi are all the kinds of rolls that you see.

If you're a fish fanatic, I'd suggest Chirashizushi.
It's basically just a bowl of vinegared rice with sashimi pieces.

If you're into just seafood, wasabi and vinegared rice, Nigirizushi is for you.
Although seemly just simple, there's a lot of room to be filled for perfection to be achieved.

I suggest that you watch Jiro Dreams of Sushi whether you love or don't love sushi. It's a really interesting documentary about the best sushi chef in the world.

I once ate sushi that went by the nickname Tempura Crunchy Ninja. It was fried, and was the best.

I see that you're into improvised sushi. I have not tasted any improvised sushi before sadly to say. The most creative one I've tasted is sea urchin nigiri.
